Cauliflower Tortilla Recipe

This post is sponsored by CAULIPOWER Cauliflower Tortilla but the content and opinions expressed here are my own.
I just build a garage gym in my home! I'm so excited! The biggest reason is for my kids to be able to workout with me. I still plan to go to the gym, but the garage gym is a supplement and for weekends and holidays! It's at the beginning stages, but I can't wait to keep growing the gym, and hitting my health goals.
Speaking of health goals. It's almost 2020! What are you health goals? My problem is eating right. I need to up my vegetable intake.  I will do well at first, but then go back to my old ways. I need to find recipes that are easy, and that taste good! Luckily my kids are not picky eaters and will try things. When I first heard of Caulipower Cauliflower Tortilla, I was nervous. I'm not the biggest fan of cauliflower, how would I like it as a tortilla?!? YOLO. I bought it, heated it on a skillet and...... it was good!! What??!? Yup! It was good! So many recipes you can use - any taco recipe and use a Caulipower Cauliflower Tortilla. I decided to do an Asian lettuce wrap recipe I use, but with a Caulipower Cauliflower Tortilla instead of lettuce.

**Caulipower Cauliflower Tortilla's are found in your local grocery stores in the freezer or refrigerator aisle. I found mine in the gluten free freezer aisle at my closest grocery store!

Ingredients:
- veggies of your liking! I used a premix bag of shredded cabbage, kale, carrots, broccoli, and brussel sprouts, if you don't use a premix bag:

- shredded cabbage 2 cup

- matchstick carrots 2 cup

- 2 cups cooked ground beef or I used beef cut in to small strips like fajita - with whatever seasoning you would like
- Caulipower Cauliflower Torillas

- 1 tbs. soy sauce
- 1/4 cup hoison sauce
- 1 tbs. sesame oil

On medium high put sesame oil in skillet or wok heat till hot - add cabbage for a couple of minutes till wilt and then add carrots.  Stir occasionally for a few minutes and then add ground beef till hot - couple of minutes and then add hoison sauce and soy sauce and cook for a few minutes about 5 - until all is hot.

On the skillet, heat up Caulipower Tortilla - directions on the package. Less than a minute to heat! Put together the taco!

The true test is...do my kids like it? My kids are very honest about what's good or bad.

The verdict...Scotty loved it! She said it was good. I was surprised because she doesn't like cauliflower. Connor said it was alright. He couldn't get over the texture and his taco fell apart. The texture of the tortilla was like a corn tortilla. Connor is a big fan of flour tortilla, so he was having a hard time switching. He said the taste was good!

Recently, I've been thinking about trying a plant based diet for a little bit. These are perfect. They are vegan and gluten-free! I can substitute fried tofu instead of the beef! I'm excited!

Self Care

9/18/2017

It's been over a year since I've moved to Austin, Tx. I love it here! It's great. I miss the small town I'm from, but Austin is growing on me. One of my favorite things about Austin is how this city promotes a healthy active lifestyle....and also tacos.
When I first started my job as a Child & Parent advocate for victims/survivors of domestic violence, sexual assault, and human trafficking, the word self care came up in every training I went to. People would always ask what do you do to take care of yourself? Well, I like shooting guns, working out hardcore, and hanging out with my kids/family. I would get weird looks about the first two answers and suggestions on self care that was a lot more calmer and relaxing. My work offers yoga or meditation once a month. I thought I'd give yoga a try!
Picture
I did not like it. I wish I did. It looks fun and poses look neat, but for some reason it's not relaxing for me. I also think I'm holding my breathe or not breathing correctly. Maybe with more practice and tries I'll enjoy it.

One thing I enjoy about yoga is how cute their clothes are. prAna yoga clothes are my favorite! They are so comfy and fashionable. The pictures above, I'm wearing their Deco Crop leggings (dragonfly) in a small (http://www.prana.com/deco-crop.html?colors=dragonfly). I tried to do a yoga pose called Kapotasana or King Pigeon pose, I thought I had it, but when I looked at the pictures it looked nothing like the pose. My prAna leggings were so comfortable and stretchy, they didn't bother me. I have other leggings that constrict my movement and/or are very uncomfortable. I for sure would't be able to do many poses with those leggings. I'll stick to my prAna leggings.

One of my favorite things about prAna is how they give back. They are big supporters of showing love for our planet. The offer sustainable, recycled, fair trade certified and hemp items. They also give back to communities all over the world - one of them is connection underserved youth with the outdoors.

Another reason why I love their clothes is how versatile it is. Whether I'm trying out yoga, to grocery shopping with the kids, my leggings go well with my activities. prAna also has a great clothing line. I love my Daria Sweater Hoodie in muted truffle color (small) -
http://www.prana.com/daria-sweater-hoodie.html?colors=mutedtruffle. It's perfect for fall weather! Check out the sweater in the pictures below.

Summer Bod

7/5/2017

I started the new year working out 4-5 times a week and eating extremely healthy. I was doing well, until a couple of months ago I slacked off. Well, summer is here and I still have my winder bod. Oh well! It's never too late to get back into healthy living!

I started counting my macros again. What is counting macros? You add up how many grams of fat, protein, and carbs you ate that day. To help me, I use an app that tracks what I'm eating and breaks it down to how many carbs, fat, and protein I eat. I can easily hit my carbs and fat. No problem. It's the protein that is hard to reach. I drink a protein shake after my workouts - two scoops - and I still have a hard time hitting my daily protein intake. I recently heard about Lorissa's Kitchen Meat snacks. They have 11 grams of protein per serving. It's great! It's my on-the-go protein snack. Perfect to grab before working out!

Lorissa's Kitchen

The only problem is that when I take it to my workout class, I have to hide it. My kids love Lorissa's Kitchen protein snack! They go through a bag in minutes. I know to bulk order on their website or on Amazon.com.

(Photo by: Connor. My sweet son took this without me knowing! He loves Lorissa's Kitchen meat snacks! )
Other amazing facts about the protein snack is:
- 100% grass-fed beef
-Responsibly raised
-Antibotic free chicken and pork
-No added growth hormones
-No nitrites
-No added MSG
-No preservatives
-Gluten Free

It's great to hit my goal daily, while eating a delicious snack. It's great for the kids too! I can't decide on a favorite flavor yet - I like all them all! Connor likes the Korean Barbeque, and Scotty's favorite is the Sweet Chili.
Picture
This meat snack is also perfect for hiking or camping trips! My kids and I love to go on adventures and we've taken Lorissa's Kitchen with us! It's the perfect snack for hiking.

I’m hooked! These are so good! I recently started counting my macros or macronutrient intake. I track every day how many grams of protein, carbohydrates, and fats I consume. I like to say I’m a health freak, but that isn’t really true. I can’t stay away from candy and cake. Not healthy. I do love fruits and vegetables, but sometimes I don’t eat enough vegetables. These Blueberry Oat Muffins from Garden Lites are made with fresh zucchini and carrots! The chocolate muffins are 33% vegetables! Crazy to think that it's made up of 1/3 veggies. Garden Lites provide a convenient, more enjoyable and easier way to eat your vegetables. It’s so nice to know I’m getting a good amount of veggies while eating a tasty treat! Since I can’t stay away from sweets, I eat these muffins for dessert. It’s the perfect balance of healthy and sweet – it makes the perfect dessert for me.

I got my Garden Lites Muffins at HEB! You can find yours in the freezer section of  your nearest Publix, Stop & Shop, Giant, Shop-Rite, HEB, Kroger, or Costco. This is a hot item! The chocolate muffins were sold out at the HEB closest to my house. Luckily, There were a few boxes of the Blueberry Oat Muffins left.

My kids are in love with the Blueberry Oat Muffins! This is an easy on the go snack/breakfast/side/etc. This single mama loves them because they have fresh zucchini and carrots! My kids have no clue they are getting a good amount of veggies! Made of clean and simple ingredients. Added bonus that they are gluten free and dairy free!

Healthy Living

**This post was sponsored by Nature Made® as a part of an Influencer Activation for Influence Central.
Ever since I've moved to Austin, I've lived a lot healthier lifestyle! I try to do trails or hike as much as I can. I love it here. I love being outdoors. My biggest problem is food. I love food and I love to eat. I eat too much junk food and need to make sure I'm getting all my daily vitamins.
Wal-Mart Supercenter is less than 2 miles away from my house and I knew they had Nature Made vitamins. Plus, they have everyday low prices so I don't have to wait for a sale! Nature Made vitamins were affordable! When I got there, I was impressed with their selection! I spent a good quality of time figuring out which vitamins best fit my healthy lifestyle. I don't know much about vitamins, so it was nice how Nature Made had information on the label of what each vitamin helps with.

Since vitamins are new to me, I wanted to start with a multi vitamin. I found a Multi for Her Nature Made vitamins - that are gummies! What? Gummies? I was very excited! Reminded me of candy. They taste good too! I also bought fish oil. It has 300 mg OMEGA - 3! I've taken fish oil in the past. The problem with me taking fish oil is it made me burp. I know, gross. When I was at Wal-Mart looking for fish oil, I saw Nature Made has a "burpless" fish oil vitamins. I laughed out loud. It is purified to remove mercury†! It also helps support a healthy heart†!
Picture
The Wal-Mart selection of Nature Made was great, it took me a while to decided the next vitamin. Nature Made® has a variety of vitamins, minerals, and supplements (VMS) to help support nutritional gaps with your health goals in mind ranging from Digestive Support, Heart Health & Function, Energy Metabolism, Women’s Health and much more!†

With the weather change, I needed a vitamin to help support the immune system. I'm ready for this cooler weather. Texas summers are not pleasant sometimes. I do not like the over 100 degree summer days. With cooler weather, comes colds and sickness though. I want to make sure I'm as healthy as I can be so I decided to get vitamin c which helps support the immune system†. My next choice of vitamin is super B-complex. Sounds complex! ;) I wanted to give it a try because of the cellular energy production and antioxidant support†. With my new hobby of hiking and outdoor adventures, I wanted to make sure my body can keep up and be active.
Picture
At Wal-Mart supercenters, they also carry Nature Made® Probiotics: Nature Made® Advanced Dual Action Probiotic has been clinically studied and provides dual support to both your small and large intestine for comprehensive coverage to help support digestive balance and healthy gut flora.† I was surprised they had probiotics! Very good way to start or continue a healthy lifestyle!

Nature Made® is the #1 Pharmacist Recommended brand for many key dietary supplement categories* - that's a huge reason why I trust this brand.
“*Based on the 2016 U.S. News & World Report – Pharmacy Times Survey.”

Nature Made® vitamins and supplements: An easy, convenient way to help your body get the nutritional support it needs every day, whether it be to support bone health, immune health or energy metabolism (helping convert food into energy).†

Toothbrush

"Baby you don't have to rush
You can leave a toothbrush
At my place
At my place
We don't need to keep it hush
You can leave a toothbrush
At my place
At my place" - DNCE

That song is so catchy! I love it! Of course, my first thought was, the place better be clean for me to leave my toothbrush there ;) kidding! But seriously, I'm always on the go - from hiking, sleepover with friends, or family. The thought of leaving my toothbrush out in the open where there are tons of bacteria, especially in the bathroom area, disgust me. I recently came across this product called IntelliDent Toothbrush Shield. It's great!
Picture
It's disposable and effective up to seven days! The material reminds me of a surgical mask, which is great - breathable and quick to dry! It was easy to put on, my three year old can do it!
One of my recent hiking trip was hot and humid. I used a plastic toothbrush cover and my toothbrush was moist the whole day. At night, I felt like I was brushing my teeth with mold. With the Toothbrush Shield, it's breathable and has been tested to have a 99.9 percent effective barrier against surface and airborne bacteria.

My last sleepover was fun! My friend has a cute dog, but she sheds like crazy! With the Toothbrush Shield, I didn't have to worry about dog hair or any other things that shouldn't be on your toothbrush or in your mouth.

With my kids going back and forth to their dads, having the Toothbrush Shield protects against germs in the suitcase or their backpack.

Also, how gross is it to leave your toothbrush out in the bathroom where people pass gas. Let's be honest. You don't want to think about it, but it happens. Having the Toothbrush Shield helps clear my mind and protects our toothbrushes! Thank you!

We love snapchat, selfies have been so fun! Scotty's loving her Toothbrush Shield, and this momma doesn't have to worry about airborne bacteria floating around!

On my travels to Oakland, California, I stopped by Main Squeeze. I got the Acai Bowl - it was AMAZING! I'm in love :)! In the small town I lived in, there is no such thing. Now that I lived in the city, I found one place that sells them! I'll have to check it out ASAP. In the mean time, I searched on pinterest to see how to make them. I found many recipes where I had no clue how to get the ingredients - maca? lucuma? what? So I took a leap of faith and created my own ;) It's easy and taste so good!

Here's a great article and more recipes on Acai Bowls: Everything You Need to Know about Acai Bowls

Picture
Oakland, California
Main Squeeze
Ingredients:
4 tbs. of Acai Powder - found it at my local HEB in the healthy isle of supplements.
2 cups of frozen strawberries
1 banana (frozen or not)
1 cup soy milk - I read a lot of recipes saying Almond milk, but Scotty is allergic to almonds

Toppings: ***Get creative! Try new things! Pick your fav fruit toppings! Add honey!
Granola
Strawberries
Blueberries

My blender is in storage, so I used my mom's food processor. It worked! I just blended all the ingredients together, put it in a colorful bowl, added the toppings, and enjoyed! So good! I can't believe this is breakfast, it's more of a dessert! Try it! Let me know what you think!
Picture
Acai Powder. My sister told me you can buy Acai smoothie packets in the frozen fruit isle. I should have checked there, this powder was expensive.
